How’s everyone holding up out there in “quarantine land?” If you’re like me, you’re probably in your kitchen cooking for your family more than you normally do. (BTW, we are eating waaaaay more than any rational people should consume in one week.) And because I know you don’t want to spend all your waking hours around the stove, I thought it might be helpful to pull together some “Deliciously Quick and Easy Dinner Recipes.” These should get you in and out of the kitchen quicker so you can spend some quality time with family around a board game or something.
Whether we like it or not, this seems to be the perfect time to pause and reset priorities that have gotten lost in our “push ahead” lives. In the midst of all this uncertainty, one absolute truth remains. Family and relationships are what matter the most. This is why I have spent more time connecting with those that I love and making sure they are safe and healthy in the midst of this crazy season.
The main reason I created this blog came from a conviction that food isn’t just about eating, but inspiring and cultivating relationships. As we go forward and get past all of this, my prayer is that we’ll look back in our rearview mirror and remember that relationships are what life is truly made of. Enriching and cherishing those precious commodities will always bring us the most satisfaction and fulfillment.

I’ve commented already on most of these recipes. So fabulous. That Spanish egg dish, the pasta with shrimp and tomatoes…. lovely all of them. We don’t necessarily need quick and easy recipes during this time, but I guess if people are cooking more these days, maybe I’m wrong about that! I’m still cooking the same amount, and that’s for just the two of us Never stop cooking!!!

I totally agree with “never stop cooking!” I do know people who are homeschooling, working from home and trying to cook every meal for their families, which I do have a soft spot in my heart for them.
