How’s everyone holding up out there in “quarantine land?” If you’re like me, you’re probably in your kitchen cooking for your family more than you normally do. (BTW, we are eating waaaaay more than any rational people should consume in one week.) And because I know you don’t want to spend all your waking hours around the stove, I thought it might be helpful to pull together some “Deliciously Quick and Easy Dinner Recipes.” These should get you in and out of the kitchen quicker so you can spend some quality time with family around a board game or something.
Whether we like it or not, this seems to be the perfect time to pause and reset priorities that have gotten lost in our “push ahead” lives. In the midst of all this uncertainty, one absolute truth remains. Family and relationships are what matter the most. This is why I have spent more time connecting with those that I love and making sure they are safe and healthy in the midst of this crazy season.
The main reason I created this blog came from a conviction that food isn’t just about eating, but inspiring and cultivating relationships. As we go forward and get past all of this, my prayer is that we’ll look back in our rearview mirror and remember that relationships are what life is truly made of. Enriching and cherishing those precious commodities will always bring us the most satisfaction and fulfillment.
BE SAFE AND HEALTHY!

You are gonna LOVE this “better than take-out” Flank Steak Stir Fry Recipe. Crisp textures from the veggies and tender chunks of meat give this dish a variety of texture and flavor. Fresh Spinach and cherry tomatoes give this Shrimp Scampi dish a fresh and bright feel while the lemon juice makes it pop. And of course, the butter, garlic, and wine bring a rich flavor to the dish. Add some spice to your life by trying this Grilled Beef Satay with Spicy Peanut Dipping Sauce. There’s a kick in both the marinade and the peanut sauce. The sauce, although it brings a little heat, adds a creamy, cooling influence to the dish. If you don’t like too much heat, you can taper down the hot chili sauce and the crushed red peppers.
What a wonderful, savory dish to wake up to in the mornings. This recipe beautifully displays eggs nestled in a spicy tomato sauce with a hint of smokiness. You won’t believe how an ordinary egg can be transformed into an amazing work of culinary richness in these Spanish Baked Eggs in Purgatory.
This recipe is light and fresh with a nice little kick from a hint of jalapeno hidden in the fruit salsa. Pan-Seared Sockeye Salmon with Fruit Salsa is marinated in a lemon-lime garlic sauce, pan-seared perfectly and rests on a colorful bed of fresh fruit.
Turkey Burgers that I have tried in the past tend to be dry and quite bland. But these, oh my, are some of the juiciest and tastiest you’ll find. Spices and herbs permeate the meat to enhance the turkey’s overall flavor. I’ve also added Rotel to the recipe which gives it a nice little kick. If you were like me and wrote off turkey burgers for good, please give these a try.
A cozy “quick and easy” soup that is healthy, wholesome and ladened with chunks of onions, celery, and carrots. Both wild and brown rice add amazing texture for a truly satisfying bowl of warmth during these crazy quarantine days that are upon us.
