Elevating Side Dishes to a new Level

Green Beans and Brussel Sprouts – I wouldn’t necessarily call them an “elegant” side dish. But hold on a moment! Envision sprinkling feta cheese, sun-dried tomatoes and kalamata olives to roasted green beans. Now they are elevated to a new status of “dignity.” And then imagine caramelized Medjool dates and a really good blue cheese mixed in with sautéed Brussel sprouts. Wow, they are no longer of a peasant class, now they have risen to nobility. This refinement is exactly what your holiday dining experience is looking for this season. Listen, and you will hear the heavens singing over your Christmas table.

Bacon Grease and Green Beans

I grew up eating green beans that had simmered in a liquid with the grease of a pound of bacon just fried and crumbled. Then probably a stick of melted butter after they were drained. Of course, you cannot forget the crumbled bacon sprinkled on top. Ridiculous, but so dang good.

Odoriferous Green Things – Brussel Sprouts

I think the first time I had ever tasted Brussel Sprouts (at least that I recall liking) was probably 10 years or so ago. The smell alone was enough to drive you out of the house. Who in their right mind would put something in their mouth with such an obnoxious odor? Then one day when we were out eating with friends, they ended up ordering Brussels Sprouts as an appetizer. Just for the sake of being polite, I tried them. The tangy cranberries and crunchy nuts that accompanied these little odoriferous green things gave me a whole new tasting experience and enlightened me with a fresh perspective. It was that day I began to like them.

Vegetables – Bright and Rich in Color

The key to any vegetable is to not overcook them. They should be bright and rich in color, and never mushy. Otherwise, you’ve just cooked all the nutrients and flavor out.
